The distillery has produced rum since the 1980s, and US and European collectors’ appreciation of Fiji as a source for pot still rums of quality and flavor has only grown.\u003c\/p\u003e\n\u003cp\u003eThis 100% pot still rum was tropically aged for 12 years, then was re-racked for a further 5 years maturation in the UK in American oak (recycled rum,) and an additional 4 and a half years in New York state.\u003c\/p\u003e\n\u003cp\u003eThe Fiji 2004 21 Year was bottled at 58% alcohol by volume without adulteration or additions.
