Fiji 2004 21 Year, Rarest

The Rarest Fiji 2004 21 Year is the last cask of a critically acclaimed mark at a high point of flavor.

The rum was distilled at South Pacific Distillery in Lautoka, Fiji from locally produced molasses. The distillery has produced rum since the 1980s, and US and European collectors’ appreciation of Fiji as a source for pot still rums of quality and flavor has only grown.

This 100% pot still rum was tropically aged for 12 years, then was re-racked for a further 5 years maturation in the UK in American oak (recycled rum,) and an additional 4 and a half years in New York state.

The Fiji 2004 21 Year was bottled at 58% alcohol by volume without adulteration or additions. Only one cask, 192 bottles, has been released as a boxed edition.

Tasting Notes Vanilla and fresh banana on the nose. On the palate, citrus, pepper, buttery caramel and a pleasingly dry finish with a hint of saline and pine."
