"This Trinidad 2012 13 Year is a vertical, single cask bottling from the now-closed 10 Cane distillery in Trinidad. Although 10 Cane was active for only a decade, this ambitious distillery more than made its mark.
In a departure from the island's usual style of molasses based rum, the base of the edition was fresh sugar cane juice. Using a specialized yeast strain and a five-day ferment, the goal was to build in flavor and stand out from the very start. In a departure from the Rhum Agricole tradition (cane juice-column still) and a consciously artisanal approach, the rum was double pot stilled then placed into an ex-cognac cask.
If it had become 10 Cane rum, the cask would have been aged for just under a year; however, the path of this cask was different. After 4 years in the tropics, it was shipped to England, then re-racked into an American oak ex-rum cask for another 5 years. Finally it crossed the Atlantic again for a further 4 years in New York state.
Each year Holmes Cay releases a portion of its 10 Cane casks as a vertical release . This year the single cask, 96 bottles, are available for the entire United States.
Tasting Notes: Expect plenty of honey, brown sugar and toffee leading to ripe banana and custard with lovely floral top notes."
